How to make oreo peppermint truffles


Crush the Oreos in a large plastic bag

Process just the Oreos in a food processor, until evenly crushed

Cut the cream cheese into chunks

Add cream cheese to food processor, process until even but don't over process

Add peppermint extract and mix just a bit more. It's better to go a little over 1/4th tsp

Form mixture into 1-inch balls, place on a cookie sheet with wax paper. Freeze overnight

Melt chocolate in a double boiler (a pot set over another one with water in it) over medium low heat. Keep stirring so it melts evenly

Dip each truffle in the melted chocolate. Roll it around so it is completely covered, let the excess drip off, then move to a cookie sheet with wax paper.

Sprinkle with peppermint sprinkles and let stand until the chocolate is fully cooled down.

Wrap up in pretty packages and distribute to important people. They keep in the refrigerator for a few days, and are best eaten cold.
