How to bake chewy pb&j cookies


Gather your supplies. You will also need a cookie sheet (2 if you plan to bake them all at once) & an electric mixer. Recipe will yield 3-4 dozen cookies.

In a large mixing bowl, combine 1 egg

1 can (14oz by weight; 10 fl oz by volume) of sweetened condensed milk

1 1/4 cup peanut butter (crunchy or creamy can be used)

and 1 tsp vanilla extract.

Mix on med-low speed in electric mixer until smooth.

Add 2 cups of Bisquick mix. Continue to mix at medium-low speed until smooth.

Mixture will be thick. Chill at least 1 hour. Preheat oven to 350° before you begin rolling dough.

Once chilled, roll dough into 1" balls. Next, roll in sugar. Place on greased cookie sheet (use aluminum foil for easy cleanup). Gently indent each cookie (I used a melon-baller) for the jelly.

Spoon jelly into each of the centers.

I used strawberry preserves (but any jelly, jam or preserves would be fine). Bake at 350° F for 6-12 minutes, taking care not to over cook.

Remove from oven when cookies are a warm blonde color and jelly is bubbly.

Delicious with milk! Cookies will be chewy (not crispy) and are not overly sweet.
