How to make chocolate stout cupcakes with guinness icing
Gather all supplies for the cupcakes and preheat oven to 350F
In a large mixing bowl, add approx. 12 ounces Guinness, milk, vegetable oil and vanilla extract. Beat the eggs one at a time in a separate bowl and add to mixture. Mix in the sour cream
Take a second mixing bowl and whisk the cocoa, sugar,flour and baking soda
Gradually mix the dry ingredients into the wet ingredient mixture
Butter 24 muffin tins and divide batter
Bake about 25 minutes until risen and set in the middle but still soft and tender.
Remove from tray and place on a rack to cool
For the frosting gather supplies ...
Cream the butter (make sure it is room temperature) and shortening
On medium heat add approx. 1/2 can Guinness, bring to a boil without stirring
While on medium speed add vanilla extract and combine sugar gradually. Add the milk one tablespoon at a time then add Guinness and mix well on high speed until you reach the desired consistency
Add the Guinness in parts and taste in between
